Chef de Partie

Reports to: Executive Chef, Executive Sous Chef, Chef De Cuisine

Work Location: Brookstreet Hotel and the Marshes Golf Club

We are currently seeking a full-time permanent Chef De Partie, required to work day shifts, evening shifts, weekends and holidays with opportunities for overtime hours.

Duties include (but are not limited to):

  • Execute and oversee food preparation for banquet functions and golf course operations, ensuring consistency and quality to our standards.
  • Support production for high-volume events, including tournaments, weddings, corporate functions, and group dining.
  • Prepare and organize mise en place to support efficient service during large-scale and time-sensitive operations.
  • Ensure all banquet and golf outlet dishes are plated, garnished, and presented according to standards
  • Assist in the planning and execution of event-specific menus, including buffets, plated dinners, and outdoor service offerings
  • Respond effectively to fluctuations in guest counts and last-minute event changes, maintaining service quality
  • Maintain compliance with food safety, sanitation, and health regulations, particularly during high-volume production
  • Assist with inventory management, requisitioning, and proper storage of food and supplies for banquet operations
  • Collaborate with front-of-house teams to ensure timely and coordinated service execution during events
  • Supervise and guide kitchen staff in production, plating standards, and workflow efficiency
  • Participate in the setup and breakdown of banquet kitchen areas, ensuring cleanliness and operational readiness

The Ideal Candidate:

  • Cook trade certification from a recognized vocational or technical college.
  • Four or more years' experience in professional cooking.
  • Previous experience in golf course & banquet operations.
  • Previous experience in a kitchen supervisor role.
  • Working with others and supervising in a team environment.
  • Must have excellent communication skills, interpersonal skills and team building skills.
  • Must have excellent organizational skills and maintain a calm demeanour.
  • Must have a valid food handler certificate.
